Yeah, I think that's where I'm leaning. Traditional maki where the fish and vegetables are supposed to be the centerpiece? Hmm, not real sure that's a good idea. Weird fusion maki that are specifically made to stand up to a whole grain's earthiness? Sure, why not. I'm thinking exotic mushroom fillings (no, not THAT exotic :D ) or maybe grilled meats?
