What flavors don't go with coffee, from a food science standpoint?

I'm going to keep this to flavors that one might imagine would go well with coffee, and skip answering things like "iron" and "gasoline" and "fermented fish paste".

Coffee's roasted, bitter, and brown in character, and people expect it in a neutral pH kind of profile. This means that other "neutral" flavors go well with it, such as nutty flavors, sweet creamy/dairy flavors, liqueurs, and chocolate. Fruits that handle a neutral context well, like raspberries, also are fine.

On the flip side, acidic flavors like citrus fruit go poorly in coffee. Tropicals (banana, mango) are also a lose. And florals (rosehip, jasmine)come off badly, both because they're too delicate, on the astringent side, and because they don't do too well when you enhance their bitterness.

What do you feel is our greatest shared trait or characteristic?

Greatest as in most-in-common? I'm afraid we are both far too emotionally susceptible to our own perceptions of other people's negative perceptions of ourselves. Often, we're making it up. This combined with a lack of perceptiveness about the effects of our own words and behavior on other people make us difficult people sometimes.

But greatest as in best? I think we both have a deep, deep capacity to care for other people, no matter how clumsily we express it. It's a virtue, and a gift.

How did you get to be so cool?

I think it's a combination of the reptilian heritage, the poor circulation, and the fact that I keep insisting on working in bulidings that are closed for holidays.

But seriously, I don't think of myself as particularly "cool". I do what I like, and I try to hang around with folks that are similar enough to me that I feel at home, and different enough from me that I always feel like I'm learning something new. I find odd things interesting, and I think I have a flair for communicating that interest to other people.

What is your favorite time of the year, and why?

Early autumn, most definitely. It's the big payoff for living in the Northeast. The air crisp and clear, Mother Nature exploding out in her gaudiest, tackiest colors all over the place, messy crunchy leaves just begging to be jumped in, and the beginning of the harvest holidays, which means food and warmth and love.

When zir transcriptionist feels better. I figure that'll be in time for Genericon, which will wear it out for another two days, so... I'm guessing the next major episode for January 29th.
