Baked for a playgroup at which no one showed, and therefore eaten mostly by myself:
Quick Cinnamon Rolls
(from the Cook's Illustrated Best of cookbook. Here by memory, and slightly modified. No responsibility if I'm remembering wrong.)
These are a biscuit based cinnamon roll, what the Pillsbury ones in the can are trying to be. I lived on those as a kid, so I love these. The recipe says to serve immediately, and that they are no good after about 2 hours. They're right. I'm tossing out the other half of the batch. This is why I had to eat four of these when all of my supposed company evaporated.
Dough:
2 1/2 cups flour
2 tbsp sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp melted butter
1 1/4 cups buttermilk
Mix dry ings. Add butter to buttermilk, add that to the dry mix and mix with a fork until it's incorporated. Flour a working surface and knead for a minute or two until it's got just a bit of cohesiveness. Whine a bit when it sticks to everything. Reflour and try again. When finished whining, shape into a 9 X 12 rectangle with your hands.
Brush with about 1 tbsp butter. Sprinkle with a mixture of:
3/4 cup brown sugar
1/4 cup white sugar
3 tsp cinnamon
1/8 tsp clove
1/4 tsp nutmeg
1 tbsp melted butter
1/2 tsp vanilla extract (I added this.)
Roll the long way, press firmly, and slice into about ten pieces. Place pieces in a pan greased with more butter, and then pour a few more tablespoons of butter on top of them all for good measure. Add butter to shopping list.
Bake at 400 for about 22 minutes. Glaze with a blend of:
2 tbsp cream cheese
2 tbsp buttermilk
1 cup confectioners' sugar
Eat as soon as they are cool enough to not burn your mouth.
