I remember cooking dinner once, years ago in Ithaca, for a friend who was vegan, and had aversions to a large number of vegetables, as well. It was actually a fun challenge.

One of the many things I imagine I might do if I rewrote my life a bunch is to become a special-needs personal chef, doing cooking/catering for diabetics, vegans, people with gluten allergies, etc. It would probably be an interesting challenge to try to put something together for you, even if each dish needed to be basically a single ingredient.
